We Love Muffins

Picky pants Lucille has been on a muffin kick lately, so though I’ve never been a baker, I’ve been brave and tried a few recipes. We’ve loved them, so I thought I’d share.

In addition to the massive amounts of leftover baby oatmeal I have from my struggles of trying to get Lennon to eat solids, I have some pureed baby food stashed away too. I don’t think they’ll save until baby #3 is ready for solids, and even if they did, I’m planning┬áto do 100% baby led weaning next time around, so…┬ámy first attempt at muffins were these baby food muffins. It says to use pureed fruit but I do fruits and veggies. One of the only ways I can get Lucille to eat veggies. These have been her favorite muffins so far! Which is great because I’m sure they’re the healthiest. Though I’m now out of baby food… but I’m sure I can just puree my own stuff up and substitute it.

For Easter I made these SUPER delicious Maple Mixed Berry Muffins!! I loved them. One tip: When she says to coat the muffin pan with non stick spray, do it! Don’t do what I did and just stick in some paper liners. you’ll loose a lot of good muffin that way!

Peter’s favorite of my muffin attempts has been these Berry-Smash Muffins that I made when I bought too many strawberries.

Also, not muffins, but we baked these Oatmeal cookies about a month ago and they were super good too! And easy. And per usual I substituted some of the oats with baby oatmeal.




Strawberry Apple Crisp with Baby Oatmeal

You know me and how I come to discover new recipes: A couple days ago there were groceries in my house about to go bad. Apples and strawberries. So I found a great recipe online. And while making it I thought, hey, can I substitute some of these ingredients with that baby oatmeal I stocked up on? (See this post on teething biscuits!) The answer is… kind of!

I replaced 1 cup of oats with a cup of baby cereal and another cup of flour with a cup of baby cereal. I also replaced sugar with powdered sugar because that’s what I had in the house and did different amounts of strawberries and apples based on what I had. So my ingredients and instructions were:

10 oz of strawberries

2-3 apples (I used 3 because they were TINY apples)

1/2 tsp cinnamon

1/5 cup of powdered sugar

1/2 cup of oats

1/2 cup of flour

2 cups of baby cereal

1 1/5 cup of brown sugar

1/2 cup of margarine

All I did was:

  1. Dice the strawberries and apple and combine them with cinnamon and powdered sugar
  2. Poured into a baking dish (that I had sprayed with non-stick stuff)
  3. Combined remaining ingredients in a bowl… and here’s where it got tricky… these ingredients didn’t mix super well and weren’t the consistency that I was expecting. However I put them over the fruit anyways and put them in the oven at 350 degrees. I checked after about 10 minutes and the top was getting a little brown and not mixing how desired so instead of making this a top coat, I just mixed it in with the rest… it wasn’t layered with a crisp layer on top. The crisp was just found throughout, which is what pretty much happens on my plate anyways. But it wasn’t as pretty a finished product. But it still tasted DAMN GOOD!

So if I make it again my steps will probably be: dice fruits, combine all ingredients, bake at 350 degrees for 30 minutes or so.

If you don’t have baby cereal you’re trying to get rid of, or if you are serving this meal to guests and care that it looks pretty, I recommend doing the original recipe, let’s link to it again! But if you bought too much baby cereal for a baby who refused to eat it like I did- I recommend this very highly!
